Prince Cakes (or little three king’s cake)

This year, for the first time since I can remember, schools are closed on Three Kings Day.

We don’t usually give special attention to this date, but for once we decided to make cakes to celebrate it.

Instead of a three king’s cake, we shaped little “prince cakes”, with some ingredients that we like.

Here’s the recipe:

INGREDIENTS:

  • 150g rice flour + 330g rye flour
  • 10g sourdough
  • 50g butter + 50g olive oil
  • 3 eggs
  • 70g brown sugar
  • 100g milk
  • Juice of 2 oranges
  • 1 teaspoon salt
  • 1 cup of dried fruits (walnuts, hazelnuts, pine nuts)
  • Sesame seeds

HOW TO MAKE:

Use a spoon to mix the sourdough with the milk.

Add the orange juice, butter + olive oil, sugar, lightly beaten eggs, flour and salt.

Knead well until the dough comes out of the bowl (add more flour if necessary).

Add the chopped dried fruits, mixing them well with the dough.

Leave to rise for a few hours until doubled in size.

Shape small circles with the dough and sprinkle with the sesame seeds. 

Bake in a preheated oven at 180° for 20 minutes.
